Happy Belly Foods & Horseshoe Green Farm, Falconhurst Estate
Horseshoe Green Farm at Falconhurst Estate, Cowden, Edenbridge TN8 5AR is a Soil Association accredited organic dairy farm. Cowden village, as the village name suggests, (cowherd’s valley Olde English) has a pastoral history that goes a very long way. The landscape lends itself to grass and herb filled pastures on which cattle have trampled for millenia!
Greg Pickering who runs Horseshoe Green Farm tells me he has been selectively breeding his herd to be 100% A2A2 for the past 5 years and is almost there. This is music to my ears as research on the subject suggests that milk from A2A2 cows (as most indigenous breeds are) is a lot easier for us to digest compared to the milk from hybrid A1A2 breeds.
The herd at Falconhurst is of around 250 milk cows who graze on 300 acres of pasture land managed on organic and regenerative principles. This is where the organic raw milk of Happy Belly products comes from. I feel very lucky to work with such sound milk.
Watch this space for the creative output that flows from the vortex of natural pastures, local microbes, healthy cows, cow’s milk, a local artisan and a local community. So far we have:
Happy Belly Original Kefir
Happy Belly Sweet Coconut Kefir
Happy Belly Misti Doi
Happy Belly Raw Labneh
Happy Belly Paneer
Happy Belly Ghee
Happy Belly Buttermilk
And now, Happy Belly Cottage Cheese:
Happy Belly cottage cheese is a rennet free fresh cheese cultured with natural clabber through a process of lacto-fermentation. The inspiration to make cottage cheese this way came from the delicious natural clabber I got from the raw milk from Falconhurst Estate’s organic dairy, Horseshoe Green Farm. The wholesome tang of the clabber had me go hmmmm and prompted a small experimental batch of cottage cheese, which went down in minutes; yummmmm. And a new Happy Belly family member joined the family!
To well being and good health for all,
Namaste!
